Hi, my name is Sam Cosentino and I am a fully independent hospitality consultant, educator and adviser. I have over 30 years experience in the hospitality industry.

My business is registered and trades under Prima Via Consultants and has been operating for 16 years in this way (first of its kind when it started in NSW).  'Prima' (an Italian word) meaning first and 'Via' meaning path, direction or way.   I specialise in Italian food and espresso coffee culture, explaining authentic, traditional methods, procedures and recipes.  This includes expert training in espresso coffee, food and gelato making.  However, I also cover more general areas, such as restaurant management (including staff training) and cafĂ© layout and design.   A few of my high profile clients include SBS TV, Swinging Bridge Wines, Nespresso, Harris DE Australia, McDonalds (McCafĂ©'s) and Macquarie University NSW (Students At Macquarie).

 

Passion, product perception and professional commitment are the driving forces of the espresso coffee and hospitality industry today. However, understanding the traditional methods and working with the wonderful masters from the “old-school” – the old-style cooks not chefs (which include my father, grandmother and aunts), the traditional coffee roaster and the gelato maker - is what fuels my life and drives me to continue this journey.  Training and experience is essential but there isn’t a map or guidelines for the love of this ritual people have shared for thousands of years...eating and drinking!
